Applesauce Muffins

  • 1 ¼ C flour
  • 1 T baking powder
  • ¼ tsp. salt
  • 2 C raisin bran cereal
  • 1 C fat free milk (skim)
  • 1 egg, slightly beaten
  • ½ C applesauce
  • ⅓ C Pioneer® Golden Light Brown Sugar, firmly packed
  • 2 T margarine, melted


  1. Preheat oven to 400° F.
  2. In a large bowl mix flour, baking powder and salt. In a medium bowl mix cereal and milk; let stand 3 minutes. Stir in egg, applesauce, Pioneer® Golden Light Brown Sugar and margarine. Add flour mixture; stir just until moistened.(Batter will be lumpy). Spoon batter into muffin pan sprayed with no stick cooking spray or lined with cupcake sleeves, filling each cup two-thirds full. Bake for 20 minutes or until golden brown.
