Apple Rhubarb Crunch

  • ½ C butter or margarine, melted
  • 1 C all-purpose flour
  • ¾ C old-fashioned oats
  • 1 C Pioneer® Golden Light Brown Sugar
  • 1 tsp. cinnamon
  • ¼ tsp. allspice
  • 2 C rhubarb, diced
  • 2 C apples, pealed and sliced
  • ¾ C water


  • ¾ C Pioneer® Sugar
  • 2 T cornstarch
  • 1 tsp. vanilla


  1. Preheat oven to 350° F.
  2. In a medium mixing bowl melt the butter in the microwave. Add flour, oats, Pioneer® Golden Light Brown Sugar, cinnamon and allspice.
  3. In a 9-inch square baking pan press half of the mixture into the bottom. Arrange the diced rhubarb and sliced apples evenly on top.

Sauce Directions:

  1. In a saucepan add water, Pioneer® Sugar, cornstarch and vanilla. Cook over medium to medium-high heat until thick. Pour over the rhubarb and apples.
  2. Sprinkle the remaining oat & flour mixture on the top. Bake for 1 hour.
  3. Serve warm with ice cream or whipped cream.
