Apple Cake with Maple Syrup

  • 1 ¼ C Pioneer® Sugar, divided
  • ½ C Michigan maple syrup
  • ½ C butter, softened
  • 1 tsp. vanilla
  • 6 oz. cream cheese, softened
  • 2 LG eggs
  • 1 ½ C flour
  • 1 ½ tsp. baking powder
  • ¼ tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. cardamom
  • 3 C Michigan McIntosh apples, peeled and chopped


  1. Preheat oven to 350° F. Spray a 9-inch spring form pan with cooking spray; set aside.
  2. Beat 1 cup Pioneer® Sugar, maple syrup, butter, vanilla and cream cheese at medium speed with an electric mixer until well combined. Add eggs one at a time. Combine flour, baking powder and salt in a small bowl. Add flour mixture, beating at slow speed until blended.
  3. Combine ¼ C sugar with the cardamom and cinnamon. Mix 2 tablespoons of the spiced sugar with the apples and stir them into the batter. Pour batter into pan and sprinkle with the remaining spiced sugar mixture. Bake for 1 hour and 10 minutes. Cool on a wire rack.

Cook's Note

This is a great alternative to apple pie and is great with cinnamon ice cream. It’s also great in the morning with a hot cup of coffee. Enjoy!
